Thaw 1-2 days in refrigerator before cooking. Spray oil in a sauté pan. Sauté: chicken on medium heat for approximately 5-7 minutes per side, until browned. Add veggies and cook for another 5-7 minutes until heated through and internal temperature reaches 165º. Sprinkle each portion with Jack cheese before serving. Serve with honey cream cheese that has been warmed to room temperature on the side of each place along with Mexican rice.
